Their Barolo wines, renowned for their structure and aging potential, reflect the terroir of some of the most esteemed vineyard sites in the region, including Bussia and Panerole. Our culinary journey begins with a vibrant yellowtail crudo, enhanced by the citrusy notes of blood orange and the depth of pistachio, paired with the refreshing 2023 Langhe Nascetta DOC. From there, a pecorino-crusted halibut meets the layered richness of both a 2022 Nebbiolo d’Alba DOC and a 2021 Barbera d’Alba DOC. A torched tuna nigiri intermezzo provides the perfect segue into our showcase of Barolo, featuring a 2020 Barolo DOCG. The third course highlights the earthy decadence of mushroom agnolotti with black truffle, complemented by the refined depth of the 2018 “Panerole” Barolo DOCG and the 2015 “Bussia” Barolo Riserva DOCG. The evening concludes with a slow-braised short rib, its richness mirrored by the exceptional 2014 “Sette Anni” Barolo Riserva DOCG.
