We live near Bordeaux where restaurants take their time serving and savouring every course, and this restaurant did exactly that. As the cool breeze of late fall settles in, we're excited to present a multi-course tasting menu that captures the essence of the season. Each course is thoughtfully crafted to highlight the rich, warming flavors of autumn, from savory meats to hearty vegetables and indulgent desserts, paired with wines from some of the most renowned regions across the globe, each selected to complement the unique flavors of the dishes. This menu celebrates both the bounty of the season and the artistry of pairing food with wine, offering a perfect balance between comfort and elegance. You’ll begin with vibrant, delicate starters like hamachi crudo, paired with the crisp, dry Eiko Fuji Honkara sake from Japan, or chicken liver mousse complemented by the sparkling Leo Hillinger "Secco" Rosé from Austria. The second course elevates the fall flavors with dishes like scallops, served alongside a creamy pumpkin and celery root gratin, paired with the bright minerality of Bertani "Sereole" Soave from Italy. As the courses progress, heartier dishes take center stage, such as black bass with fregola in a mussel curry sauce, paired with a Trousseau from Jura, and a savory rabbit pappardelle paired with a robust Mendoza red blend, Clos de los Siete. For the grand finale, the main courses will feature a decadent duck duo with verjus glaze and cappelletti, paired with the bold Bodega Numanthia "Termes" Tinta de Toro from Spain, or speck-wrapped pork loin accompanied by blackberry mole, paired with the unique Croatian red, Bura-Mrgudic "Basina" Tribidrag. Finally, dessert will bring the evening to a sweet close, featuring indulgent options like a pecan and caramel cheesecake with bourbon caramel, paired perfectly with a rich 20-Year Tawny from Quinta do Vallado, Portugal. |
