Tonight, we take a journey to the Pyrenees in South West France (Sud-Ouest) — an ancient, rugged landscape with a winemaking history that predates Bordeaux. Sheltered in the shadows of the Pyrenees and the vast Landes forest, regions like Gascogny and the Pyrenean foothills are famous for indigenous grape varieties, untamed mountainous terroirs, and rich gastronomic culture.
This evening, we are proud to showcase the exceptional work of the Plaimont wine collaborative. Founded in 1979, Plaimont is far more than a producer; they serve as the dedicated custodians of the region’s soul. Their legacy is defined by a fierce commitment to preserving the extraordinary—from safeguarding ancient, pre-phylloxera vines that date back to the 1830s, to managing an unparalleled conservatory dedicated to reviving forgotten indigenous varietals that were once on the brink of extinction. Influenced by the unique convergence of Atlantic maritime winds and the rugged mountain climate, Plaimont’s wines offer a rare window into a landscape where tradition is not merely observed, but actively lived and protected. As we move through this evening’s menu, you are tasting a vibrant, living history of an appellation that refuses to compromise on authenticity.
Join us on Wednesday, 29 July 2026, as we welcome Greg Rivera, Regional Manager for August Imports — custodians of the Plaimont passion project here in the United States as the importers of these rare and sensational wines — hosting our excursion to the Pyrenees, alongside another outstanding menu curated by Executive Chef Sophia Kiasi.
